Vegan Gluten Free Cornmeal Pancakes

This recipe is proof positive that vegan and/or gluten free foods can be so delicious that you’ll want to eat them even if you don’t follow a vegan or gluten free diet.  This is a particularly wonderful recipe for those with multiple food sensitivities.


  • 1 cup finely ground yellow corn meal

  • ½ cup  standard or GF all purpose flour

  • 1 1/2 Tablespoons baking powder

  • 3 1/2 Tablespoons sugar

  • 3/4 teaspoon salt

  • 3 Tablespoons unsweetened applesauce

  • 3 Tablespoons oil or melted butter/margarine

  • 1 1/4 cup non-dairy milk of your choice


  1. Whisk together dry ingredients. Whisk together wet ingredients.

  2. Whisk dry into wet ingredients- batter will be thin.

  3. Let the batter sit for five minutes someplace warm to soften the cornmeal and allow baking powder to rise. VERY IMPORTANT.

  4. Cook the pancakes for about 2-3 minutes on each side.
