Vegan Blueberry Muffins

Ingredients

    • 1 1/2 cups flour

    • 1/2 cup sugar

    • ¼ teaspoon salt

    • 2 teaspoons baking powder

    • Dash vanilla extract, dash cinnamon

    • 3/4 cup soymilk or other non-dairy milk

    • 1/4 cup oil

    • 1 cup frozen blueberries

Directions

  1. Preheat over to 400 degrees
  2. Combine flour, sugar, salt, and baking powder in a mixing bowl.

  3. Mix soy milk and oil.

  4. Add wet ingredientsa to dry mix. Stir until just blended. DO NOT OVERMIX.

  5. Gently fold in blueberries.

  6. Pour into 12 lined muffin cups bake for 25-30 minutes.
