Maple Pecan Granola

Maple Pecan Granola

  • 2 cups rolled oats (old fashioned, NOT quick cooking)
  • 1 cup pecan pieces (or additional 1 cup oats)
  • ¼ cup maple syrup
  • ¼ cup oil (walnut, canola, or sunflower)
  • 1 pinch salt

  1. Preheat oven to 300 degrees
  2. In large bowl whisk together maple syrup, oil, and salt
  3. Add rolled oats and pecans to syrup mixture
  4. Mix well, making sure that the dry ingredients are well covered in syrup mixture
  5. Pour onto large rimmed baking sheet. Covering your baking sheet with silpat or parchment paper will make cleanup easier, but isn’t strictly necessary
  6. Bake for approx 60 minutes, stirring every 20 minutes to help mixture cook more evenly
  7. Let cool completely on baking sheet before storing in an airtight container

You can make this recipe nut-free by replacing the pecans with an additional cup of oats, or make it gluten free by using certified gluten-free oats.
