Corn Muffins

Ingredients:

    • 3/4 cup yellow cornmeal

    • 1-1/4 cups all-purpose flour

    • 1 tablespoon baking powder

    • 1/2 cup sugar

    • 1 teaspoon salt

    • 2 large eggs

    • 2 tablespoons honey

    • 3/4 cup whole milk

    • 1 stick (1/2 cup) unsalted butter, melted and cooled

Directions

  1. Preheat oven to 350.

  2. Whisk together dry ingredients

  3. In a separate bowl, whisk together honey, eggs, and milk.

  4. Add the milk mixture and melted butter to the dry ingredients. Stir until just blended. DO NOT OVERMIX.

  5. Portion into 12 muffin tins with liners, or one well greased 8×8 inch square baking pan.
  6. Bake muffins for 17-20 minutes, or cornbread for 25-35 minutes, until the top is set and golden.
