Applesauce Muffins


  • 2 cups all-purpose flour

  • 2/3 cup sugar

  • 2 tsp. baking powder

  • 1/2 tsp. baking soda

  • 1/2 tsp. salt

  • 1 1/2 tsp. ground cinnamon

  • 1 tsp. ground allspice

  • 1/3 cup vegetable oil

  • 1 egg

  • 1 1/3 cups applesauce (unsweetened)


  1. Preheat oven to 350 degrees
  2. Combine dry ingredients
  3. Whisk together oil, egg, and applesauce
  4. Fold dry ingredients into wet using rubber spatula until just barely combined.  DO NOT OVERMIX
  5. Portion into 12 muffin tins, lined or well-greased.
  6. Bake for 25-30 minutes. Let cool for 5 minutes before removing from pan

Note– This muffin batter freezes very well. Simply portion into muffin tins (lined with muffin papers), allow to freeze overnight, then remove muffins from tin and store in freezer- safe bags. When ready to bake, put muffin pucks into a muffin tin and bake at 350 for 30-35 minutes.
